Homemade Baked Potato Soup

My kids are semi picky eaters and they all cheer when we have Baked Potato Soup for dinner. It's a classic at our house, especially in the Winter time. My husband grew up eating it and I'm sure the tradition will continue. Here's a tried and true recipe that the whole family is sure to love.
Recipe
1/2 cup butter
2/3 cup flour
3 cups Chicken Broth
3 cups Milk
1/2 teaspoon salt
1/2 teaspoon pepper
4 green onions chopped
1 1/4 cup shredded cheese
1/2 cup sour cream
12 slices of cooked and crumbled bacon ( I use the big bag from Costco, it saves money and time)


Bake potato's in over or microwave until tender. Slice in half and scoop pulp into a bowl. Break up any large pieces. Melt butter and flour in large pot on stove, add broth and milk. Cook over medium heat until thick and bubbly stirring often. Add all other ingredients including potato insides. Enjoy!
